"Their flagship wine, the 2013 Proprietary Red Dancing Hares is a blend of 60% Cabernet Sauvignon, 34% Merlot and the rest Cabernet Franc and Petit Verdot. The color is a saturated ruby/purple, the nose sightly more restrained than the Mad Hatter, but intense, deep and promising. The wine is extremely full-bodied, with notes of chocolate, espresso, crème de cassis, licorice and blackberry, this has killer intensity, super full-bodied richness, but is relatively light on its feet for this kind of mass and richness. Notes from the Winemaker (2014 vintage):
The 2014 Mad Hatter is a fitting part of a continuum of quality. It is an integrated blend of Cabernet Sauvignon (68%), Cabernet Franc (19%), Petite Verdot (9%), Syrah (3%) and Malbec (1%). It has aromas of ripe red cherries, blackberries, seasoned with brown baking spices and a hint of juniper, all grounded by notes of freshly tilled soil. True to form, the wine has a soft approach, full body and elegant finish. The palate is dense and earthy, with flavors of red and blackcurrant, blackberry and lavender. A hint of dark chocolate and licorice extend through a long, soft finish.

"The 2014 Proprietary Red Wine is a blend of 87% Cabernet Sauvignon, 4% Cabernet Franc and the rest Petit Verdot, Merlot and Malbec, again, showing slightly less depth than its two surrounding siblings, but beautiful pure fruit, silky, velvety tannins, a layered mouthfeel and deep blackcurrant and black cherry fruit intermixed with cedar wood, fruitcake and smoky oak. The mid-palate has nice fatness from a bit of Cabernet Sauvignon in the blend. It has mouth coating moderate tannins with a soft finish. Will benefit from further aging but can be easily enjoyed upon release."

Dominique and Florence Decoster also had a clear idea of the wine they wanted to make: one which mirrors their love of the Saint-Emilion region and above all one which expresses the terroir of the vineyard of Château Fleur Cardinale.
Château Fleur Cardinale has since thrilled wine lovers in every vintage, achieving that much sought-after quality of power combined with elegance.
The wines display a deep, dense-coloured hue, while on the nose there are powerful ripe fruit aromas mingling with floral notes. Feminine in style, the wines have a seductive, rich mouth-feel, underpinned by elegant, silky tannins. The finish is long and harmonious, promising very long ageing potential in bottle.
These specific tasting characteristics, immediately recognisable to its growing number of followers, are the hallmark of Château Fleur Cardinale.
