Tasting Notes/Food Pairing:
Deep ruby color with bluish hues. Intense and complex nose where the typical aromas of each variety are nicely combined to show their best expression: black plums coming from Malbec,fresh cherries and Black Currant from Cabernet Sauvignon, ripe black fruits from the Tannat, slightly mixed with spicy notes from Petit Verdot. Juicy, it expands and intensifies in the mouth, gaining density and complexity as it is savoured. Finishes with smooth, lush tannins and good length. Great with medium spiced twice cooked pork. BBQ chicken, grilled sausage, smoked cheeses.

Notes from the Winemaker:
The 2014 SAVANT is a bold, complex wine that combines the intensity of a Paso syrah with the complexity that cabernet sauvignon brings to the table. Speaking of the table, this wine is great with the usual grilled meat like trip-tip or lamb with herbs and garlic, or try matching it with the rich flavors and layered spices found in Moroccan and Middle Eastern stews like a lamb tagine, or roasted cauliflower with chickpeas or lentils and a ras el hanout spice blend

Appearance: Deep, nearly opaque, purple ruby core lightening toward the rim with thick, slow forming moderately stained tears on the glass.

Aroma: Intense and layered with black berry jam and ripe black cherry jam fruit, sweet spice of vanilla and cinnamon, with smoky oak notes, cracked pepper, leather, and in time some hints of smoked meat mixed with complex red and purple floral accents.

Palate: Full on the palate with very ripe lush black fruit and baking spice on the entry followed with dried savory herbs, cracked black pepper and smoky elements going into the mid-palate. The finish is very long and complex with a mix of returning ripe fruit, chocolate and chewy tannins as it slowly unfolds.

Varietal Compostion: 62% Syrah, 33% Cabernet Sauvignon, 5% Grenache

Notes from the Winemaker:
The 2017 Cabernet Sauvignon has heady aromatics that affirm this is a serious wine for serious wine lovers. This wine displays black cherry, Zante currant, plum and blackberry up front, complemented by dark chocolate, tobacco leaf and cool menthol.
Rounding out the nose are aromas of black olives, briarwood, fig and dried thyme. Bold and assertive on the palate with flavors initially dominated by dark fruits, Bing cherries, black raspberry, plum and pomegranate, accompanied by high note accents of cranberries and rhubarb.
Midpalate delivers espresso and dried herbs with hints of fennel and cigarbox all seamlessly integrated together on a structure of very fine grain, plush and ripe tannins.
A wine of complexity and depth with a purity of fruit and subtle layers of flavors and texture that harmonize and enhance. This wine constitutes a journey of the senses that begins with power and finishes with elegance and style
