Tasting notes: This wine is seductive. Straw yellow color with greenish tints and intensely crystalline. The fruity and varietal fragrances are extensive, interesting and complex: hints of elderflower and pleasant citrus notes, combined with aromas of sage and hints of boxwood with a subtle scent of tomato leaf and a finish reminiscent of geranium. Gradually one gets aromas of peach and lychees. In the mouth, it has character and structure, it’s persistent and harmonious. Its high acidity confers an interesting freshness to the wine. It is a wine that will age well.

Serving Suggestions: Excellent with sea-bass or bream, shellfish and seafood. It goes very well also with delicate risottos and first courses, and with a simple plate of spaghetti with tomato sauce.

Vinification:
Manual harvest for grapes selection. Then we proceed to destemmed and crushed the grapes that come left to macerate with the must in cement tank for several days. In this phase are frequent several pumping over. After this period is carried out racking and the skins is pressed and the must placed in a tank where it awaits the end of the alcoholic fermentation and malolactic fermentation, it carrying out some decanted. In July will be filtered and bottled. Then will follow a long period of aging in bottle.

Wine:
Ruby red in color. Perfume hints of red fruit, full and fragrant. Flavour full, sapid and dry with a lot of tannic. Temperatura di servizio / Serving temperature: 18-20° C.

Food Matching:
This wine goes well with a vast gastronomical variety of meals: from gnocchi and tagliatelle with hare sauce, to pork meat and grilled beef; from pasta and beans with pork rinds and prosciutto, to chicken, rabbit and roast duck. If it’s a young wine it can go well with salame and home made sopressa.

It is a vine that occupies a position of great prestige in the viticulture of the Collio. Its origins are somewhat uncertain and confused: it would seem that it was introduced in Italy by the Venetians. Its cluster size is above average and has a cylindrical shape. The wine: the color is light yellow, lively and bright. The aroma: vinous with a bouquet that expresses the typical primary aroma of the grape with suggestions of green pepper. The taste is dry but without violence and has an excellent ability to age. It should be served on soups, on vegetable pies and on fish.

VIS UVAE, from the Latin the Force of Grapes, to underline the force that the grape has, that is the Nature, to make a wine strong and complex, something that the hand of man alone determines it in a relative way. The effect of a week of persistence of the purplish-colored peels of Pinot Grigio in contact with the must, the so-called maceration, gives the must and then the wine those coppery notes that distinguish it from other wines. Originally these were the features that Pinot Grigio had, but then with the advent of new winemaking techniques, it was preferred to vinify it in white. Whether this was good or bad is not for us to judge, but certainly the result is different, both from an olfactory and a gustatory point of view.
