Dominique and Florence Decoster also had a clear idea of the wine they wanted to make: one which mirrors their love of the Saint-Emilion region and above all one which expresses the terroir of the vineyard of Château Fleur Cardinale.
Château Fleur Cardinale has since thrilled wine lovers in every vintage, achieving that much sought-after quality of power combined with elegance.
The wines display a deep, dense-coloured hue, while on the nose there are powerful ripe fruit aromas mingling with floral notes. Feminine in style, the wines have a seductive, rich mouth-feel, underpinned by elegant, silky tannins. The finish is long and harmonious, promising very long ageing potential in bottle.
These specific tasting characteristics, immediately recognisable to its growing number of followers, are the hallmark of Château Fleur Cardinale.

Brilliant garnet red in colour with ruby gleams, and aromas of red fruit and red peppers typical of Cabernet Sauvignon accompanied by soft and smooth vanilla and liquorice notes characteristic of very ripe Merlot.
The tannins are agreeable, fine, dense and harmonious. The palate is full-bodied, well-balanced, subtly mixing spices, old rose and cherries.

"Tasted at the château, the 2006 La Croix de Beaucaillou is now fully matured on the nose, but it has surprising intensity with plenty of tar-tinged black fruit, kirsch and roasted herbs. The palate is medium-bodied with firm tannin, well-judged acidity, still quite structured and masculine in style, but with admirable weight on the licorice finish. This is the second wine of the incredible Vieux Chateau Certan. It gives so much pleasure already with hazelnut, chocolate, berry and spices. Full body, with super fine tannins. Savory and juicy and long. So delicious and beautiful. The beautiful fruit in this wine makes you want to drink it now.

"Good bright, full ruby. Penetrating aromas of black cherry, blackberry and smoky chocolate, accented by an herbal note. Bright, fresh and substantial, with moderately sweet red and dark berry and chocolate flavors. A firm acid spine and dusty, mounting tannins give this wine a rather austere quality. Finishes moderately long and a little clenched. Though well made, this has to be the least ample and sexy Roc de Cambes I've tasted in the last ten years or so, which should tell you how difficult the vintage was when even Francois Mijtavile can't turn out his usual seductive, fleshy wine. "Tasted blind at the Sauternes 2011 horizontal tasting. The Domaine de l’Alliance 2011 is missing some presence on the nose compared to its peers: light undergrowth scents permeating the honeyed fruit, yet it never quite gets out of second gear. The palate is medium-bodied with orange peel and mandarin on the entry. There is a good level of botrytis here although it tapers slightly during the second half and does not quite deliver the density of others.
