Tasting Notes:
In the glass, this wine appears inky-black with a velvety core; however, on the nose, you are treated to the lightness of fresh violets, crushed blueberries, and cocoa. Complexity is confirmed on the palate with a combination of ripe blueberries and blackberries dusted with hints of cedar, tobacco, spice, and ash. Bright acidity, firm tannins and moderate alcohol finish hinting of toasted vanilla and hazelnuts. Made from the best vines on DAOU Moutain this wine beautifully showcases the characteristics of Cabernet Sauvignon as a varietal.

"Deep, lavish and creamy aromas of fudge, espresso, cola, vanilla and perfectly ripe black currants and berrries greet the nose with measured force. The wine lands on the palate with aplomb, framed by silky yet grippy tannins and boasting flavors of espresso, dense blueberry, black peppercorn, bay leaf and pencil shavings. "Scheduled to be bottled at the end of August, the 2012 Soul of a Lion has more Cabernet Sauvignon in the blend than past vintages and offers full-throttle aromas of blackberry liqueur, chocolate, espresso and graphite. Full-bodied, concentrated and structured, with some chewy tannin, it will benefit from short-term cellaring and evolve gracefully for 10-15 years.

The Daou brothers continue to focus on Bordeaux varieties from their estate that’s located high up off of Peachy Canyon Road. Across the board, these wines show fantastic purity of fruit, excellent concentration, and rich, textured personalities that never seem heavy or over-the-top. These are highly recommended and show the quality that’s possible from Bordeaux varieties in Paso Robles." - Jeb Dunnuck (Aug 2014)

"Daou's top of the line Soul of a Lion is a Cabernet Sauvignon-based blend. A dark, voluptuous wine, the Soul of a Lion captures the essence of the Daou house style. There is good purity to the fruit, but today it is the new French oak that dominates above all else, likely a reflection of the wine's essentially mid-weight structure. Still, this is a hugely intriguing wine. The blend is 97% Cabernet Sauvignon, 3% Petit Verdot." - Antonio Galloni (Jul 2014)
